Llandudno hotel welcomes new chef who has cooked for royalty and top UK kitchens

Leigh Marshall has been appointed head chef at the 1890 Restaurant at the Cae Mor Hotel.

The four-star seafront hotel, located next door to Venue Cymru, has undergone a major refurbishment as part of its move to strengthen its luxury offering.

A two-time bronze medallist at the World Culinary Cup in Luxembourg, Leigh brings a strong mix of knowledge and international competition experience.

Originally from Holyhead, Leigh, who plans to push Cae Mor towards a prestigious accolade, was also part of the National Welsh Culinary Team in 2012.

His career has included cooking at 10 Downing Street for St David’s Day celebrations, as well as preparing a meal for Prince Charles at Caerphilly Castle.

He previously worked at a two AA Rosette level and has been recognised in the National Chefs Forum rankings as one of the leading chefs in Wales.

Now in Llandudno, he says he is focused on creating memorable dining experiences for both residents and visitors, while making the most of the region’s produce.

He said: “I want to do something that puts this area on the map. The food scene across Conwy is really strong at the minute, and even though Llandudno’s a small town, it’s got a lot going for it.

“With the quality of produce we’ve got in North Wales, there’s no reason we can’t do something special here.”

Andrew Shaw, general manager, said: “We’re really pleased to welcome Leigh to the team. We want the food to match our luxurious interior and create an experience that draws people in from across Wales and beyond.

“With Leigh’s vision and experience, we’re confident the restaurant will become a destination for diners looking for something special.”

A new menu is due to launch in April, with a focus on seasonal ingredients and straightforward, well-executed dishes.
